New Scandinavian Cooking introduces Denmark!

Through Andreas’ and Tina’s journeys we have learned a lot about Norwegian and Swedish food, history and culture. Now, get ready to explore the exotic taste of Denmark.

In the latest season of New Scandinavian Cooking, premiering on public television stations nationwide beginning May 5, 2007 (check local listings), host Claus Meyer guides viewers on a fascinating journey through his native Denmark, and parts of Norway and Greenland.

A charming and enlightening guide, Claus shares the culinary highlights and most spectacular travel destinations of his homeland. Claus’ informative style, along with his reputation for precision and accuracy in the kitchen, helps educate viewers all around the world about the unique techniques and ingredients used in Nordic cuisine.

Capturing the essence of a nation
In this series of thrilling travel adventures, the 43-year old cookbook author and gastronomic entrepreneur journeys from Denmark’s capital, Copenhagen, to the rocky coast and idyllic countryside, seeking out local specialties, exploring Danish history and preparing sumptuous Scandinavian recipes in unusual and exotic locations. The 13-part series captures Denmark’s innovative modern cuisine, lush natural wonders, distinctive native produce and dramatically changing four seasons.

New Scandinavian Cooking with Claus Meyer follows the successful format of previous seasons with Andreas Viestad (Norway) and Tina Nordström (Sweden), highlighting adventure and exploration, with cooking at its core. Claus meets local farmers, food producers and personalities before creating tantalizing meals outdoors, against majestic backdrops.
This season, Claus hunts for grouse in the breathtaking Norwegian mountains then prepares the bird with wild berries known for their aphrodisiac properties; paddles to Scandinavia’s southernmost point in search of the world’s tastiest apples; visits micro-breweries in Copenhagen, sweetens freshly baked crayfish with honey from a nearly extinct species of bees, sips water from an 8,000-year-old spring, concocts a vodka-based drink atop inland ice and prepares pâté near an ancient Viking burial site.

Claus the entrepreneur
Host Claus Meyer has published 14 cookbooks in Denmark and has hosted his own television series, Meyers Køkken (Meyer’s Kitchen) on national Danish television (DR1) from 1991-1998. He co-owns the gourmet restaurant NOMA, which holds 2 Michelin stars and was announced in Restaurant Magazine spring 2007 as the world’s 15th best restaurant.  Among his other business ventures, Claus owns catering, fruit and chocolate supply companies, in addition to running a cooking school. Claus also acts as a culinary advisor, lecturer and assistant professor of Foodstuff Science at the Royal Veterinary and Agricultural University in Copenhagen. Finally he produces balsamic style vinegar based on apples and plums from his own orchard.
