Episode 2, Svolvær, Lofoten Ugly but Delicious
The first episode of the second season kicks off in the beautiful fishing town of Svolvær, Lofoten in the county of Nordland. Svolvær is one of the main ports of entry to the spectacular northern archipelago of Lofoten.
The fishing industry and the varieties of fish have made this area famous. Andreas, however, catches up on some of the infamous local varieties.
The Ugliest Fish in the World
The Monkfish and the Northern Wolffish are some of the ugliest fish in the world. Not long ago, these creatures were not even considered to be proper fish. But to Andreas, they are a delicacy. He creates a couple of luscious Barbeque Fish Skewers with Spices and Herbs on the wharf of Svolvær.
The World Championship in Cod Fishing
Once every year, several hundred people from all over the world venture to Svolvær to compete in the World Championship in Cod Fishing. Andreas joins them on the fishing banks with some of the traditional fishing equipment that has been used for centuries.
Meager Vegetation
The countryside of Lofoten, with its varied, but meager vegetation, is not ideal for modern agriculture. But it does produce some of the best mutton in the world.
Preparing the Main Dishes
Andreas makes a Lamb Confit with Vanilla-scented Mashed Rutabaga. This main dish is patiently cooked in goose fat for as long as six to eight hours. For the starter, Andreas combines the treasures of the Arctic Ocean with a couple of exotic fruits -- he mixes the well-know Red and Yellow Cod with a Mango and Pomegranate Salad.
